American Mustard distils the very essence of the United States - hot-dog mustard and dill pickles - to create something really spectacular - a savoury gin that is both light and warming with a slight sensation of fire on the tongue.

It’s the perfect accompaniment to every traditional American fast food recipe, but we don't recommend using it as a garnish. That would be absurd.

The Taste

The mustard is front and central and provides warmth while being light on the tongue. We paired it with gherkin to counterbalance the heat by giving a briny note to the finished product. As a result, it’s a savory style gin that is both light and warming, with tomato providing a smoothness to the profile.

In Summary

As a Distilled Gin - the only one in the range - it’s engineered differently to the others. We quickly discovered that mustard seed, when distilled, can produce impressively poisonous compounds. This was inconvenient. So instead, we developed a process of distilling the gin in the traditional manner, then adding the mustard seed and dill pickle afterwards. (as a result it may become slightly cloudy over time - all you to do is shake the bottle and it'll clear again. Or just drink it).

So, proper mustard without the botulism. Doing it properly, in other words. Which, as a general principle, is how we prefer things.

What exactly is a pickle?

The word "pickle" is doing a lot of heavy lifting around the world, and frankly, it's time someone clarified the situation. As ever, James Gin is here to sort it out.

In Britain: ’Pickle’ is a thick, dark, mysteriously complex chutney that comes in a jar with a red lid and has been dividing cheese sandwiches since 1922. It is tangy. It is spreadable. It contains dates. Nobody knows why.

In France: a pickle is a cornichon - a tiny, perfectly formed gherkin that arrives beside your steak frites looking elegant and slightly superior, as is often the case in France.

In America: a pickle is a full-sized cucumber that has been submerged in dill brine long enough to completely reinvent itself. It emerges sharp, saline, and considerably more interesting than it was going in. It is then sliced and placed in a burger, where it will be removed by approximately 40% of the population.

In Shakespeare: “How camest thou in this pickle?" The Tempest (1611) Meaning to be stuck in a troublesome, awkward, or confusing situation. Obviously this is irrelevant to James Gin customers.

In American Mustard gin, the natural flavour is derived from the typically American dill variety of pickle - clean, briny, and unapologetically fast food friendly. Not a weird chutney. Nor a little French thing. The kind of proper pickle on which a Pickletini depends.

Ingredients

Yellow Mustard Seed: Provides the mustard component of American Mustard.

Gherkin: The oft unacknowledged ally of mustard in enlivening any patty-based portable bread and meat delicacy. It's invisible in the gin, so you don’t have to pick it out.

Juniper: Gin must contain juniper, or it isn’t gin. In fact, the name ‘gin’ is a shortening of the Dutch word for juniper, ‘jenever’. Not to be confused with ‘Geneva’, which is both a place and a convention but not a drink.

Coriander Seed: Some people are genetically indisposed towards coriander and believe it tastes of soap. They’re just weirdos, so it’s in the gin.

Angelica Root: Angelica Root was also the name of a famous 1920s blues singer from the Mississippi region. Here, it's botanical.

Dried Tomato: Is added to provide depth but also so that we can have a debate about how to pronounce it.

Liquorice Root: Seventh son of Anjelica (see above), Liquorice was born blind and therefore became a blues guitarist. His band, The Allsorts, remain unknown beyond the Mississippi Delta.

Orange Peel: Since you asked, the color was named after the fruit in about 1512.

Cubeb Pepper: In the Chinese Tang dynasty, physicians administered cubeb pepper to restore appetite, cure "demon vapors", darken the hair, and perfume the body. My gin will also do all of these things, possibly. Let us know how you get on and send photographs.

Rosemary: Not the mythical riveting factory worker of American WWII recruitment posters, just a herb.

Caraway Seed: Finland supplies about 28% of the world's caraway seed. Also, many of the best racing drivers. This is because the word ‘car’ appears in both job descriptions.

Ginger: Although used in traditional medicine and as a dietary supplement, there is no good evidence that consuming ginger or its extracts has any beneficial effect on human health. But just in case it does, it’s in the gin.

Bay: This comes in several forms, such as James and San Francisco. Here, it is a leaf, which is easier to fit inside our still.
