
TEA IN THE RAIN

WHAT'S IN IT
45 ml London Drizzle Gin
30 ml earl grey tea syrup
15 ml Italicus bergamot liqueur
15 ml pinot noir red wine
20 ml lemon juice
Foaming bitters or egg white
Lemon twist to garnish
HOW IT'S MADE
- Add gin, earl grey syrup, Italicus, red wine, lemon juice, and foaming bitters/egg white to a shaker without ice. (To make Earl Grey syrup, steep 2 tea bags in 250 ml boiling water for 5 mins, stir in 250 g sugar until dissolved, leave to cool.)
- Shake vigorously to build foam.
- Add ice and shake again until well chilled.
- Strain into a chilled coupe glass.
- Garnish with a lemon twist.
WHAT IT'S LIKE
The Earl Grey brings an earthiness to the beetroot in the gin and the lightness of the wine, with the Italicus accentuating the citrus flavours. Lemon is added to brighten it up and make it refreshing.

London Drizzle
Gin is traditionally called London Dry - but I live there and usually it isn’t. So I wanted to make a gin that would invoke that unique petrichor smell that comes from light rain hitting the pavement on a warm day. I’ve never met anybody who doesn’t like that smell.
